Planet Hollywood Cap'N Crunch Chicken

Ingredients

  • 2 cups Captain Crunch ® cereal
  • 1 1/2 cups cornflakes
  • 1 egg
  • 1 cup milk
  • 1 cup all purpose flour
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts
  • Vegetable oil for frying

Directions

  1. In a small, shallow bowl, beat the egg with the milk until frothy and thoroughly blended. Set aside.
  2. In another small, shallow bowl, stir together the flour, onion and garlic powders and black pepper. Stir until completely blended, and then set this aside also.
  3. Finally in one more shallow bowl, mix the two cereals together. To make this step easier, add the cereals to a blender, and blend on high speed until it is the consistency of course crumbs. Then transfer to small bowl. Stir to blend and set aside with the other two bowls.
  4. Cut each chicken breast into small (about 1 ounce each) chicken strips or tenders. Dip each tender into the bowl of seasoned flour. Turn to mix and coat, then shake off any excess flour.
  5. Then dip the tender into the egg mixture, again moving it around to coating well. Finally dip the ender into the cereal mixture. Press the chicken into the cereal to ensure the cereal sticks to and coats the chicken well. When the chicken tender is finished and coated, lay it on a sheet of waxed paper. Repeat with eh remaining chicken tenders until they have all been coated.
  6. Heat oil in a large heavy skillet to 325 degrees. When the oil is hot, and the chicken has all been coated, carefully begin to drop the coated chicken tenders into the hot oil. Cook a few a time, but do not crowd the tenders. Fry them until they are until golden brown and fully cooked, which will take anywhere from 3 to 5 minutes depending on their size. As each chicken tender is done cooking, remove them from the oil, and place onto paper towels to drain.
  7. When all the chicken is done cooking, arrange the tenders on a plate. Serve immediately with your choice of a dipping sauce.

Simple Creole Mustard Sauce

  • 1/2 cup Mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon mustard
